    2 medium avocados, diced

    2 medium cucumbers, sliced thinly

2 medium carrots, shredded or julienned

1 cup edamame (shelled and cooked)

    1 cup red cabbage, shredded

    5 green onions, sliced

2 tablespoon sesame seeds (optional, for garnish)

1 sheet nori (seaweed), cut into thin strips (optional)

    Optional Sauce/Drizzle:

Sriracha mayo: Mix ½ cup mayo with 1-2 tablespoon sriracha

    Additional tamari sauce for serving

    Instructions

    Cook the Rice:

Cook 3 cups of jasmine or sushi rice according to package instructions.

Once cooked, fluff the rice and stir in 1 tablespoon rice vinegar for extra flavor.

    Prepare the Chicken Teriyaki:

In a bowl, mix soy sauce, honey, rice vinegar, sesame oil, grated ginger, and garlic.

Heat a skillet over medium heat and add a drizzle of sesame oil.

Add the chicken and cook until golden on all sides (6-8 minutes).

Pour the teriyaki sauce over the chicken and simmer for 3-5 minutes until the sauce thickens and the chicken is coated.

    Prepare the Toppings:

Dice, shred, or slice all the vegetables and toppings (avocado, cucumber, carrots, edamame, cabbage, green onions, and nori).

    Assemble the Bowls:

Divide the cooked rice among 5 bowls.

    Top with the chicken teriyaki.

Arrange the toppings on the side: avocado, cucumber, carrots, edamame, cabbage, green onions, and any extras like sesame seeds or nori.

    Optional Sauce:

Drizzle with sriracha mayo or soy sauce for extra flavor.

    Serve:

    Serve immediately and enjoy!

Hint: Using a cast iron skillet for Teriyaki Chicken ensures even heat distribution, a perfect sear, and enhanced caramelization, giving the chicken a crispy exterior and juicy interior with a deeper flavor. Variations and Tips

The Teriyaki Chicken Bowl is incredibly versatile, and there are so many ways to customize it based on your taste preferences. Here are a few ideas:

    Substituting Proteins:

    • Tofu: For a plant-based version, swap out the chicken for tofu. Press the tofu to remove excess moisture, then marinate and cook it in the same way as the chicken for a delicious vegetarian meal.
    • Shrimp or Salmon: If you love seafood, shrimp or salmon are excellent alternatives. Shrimp cooks quickly and pairs wonderfully with teriyaki sauce, while salmon adds a rich, buttery texture.

    Additional Vegetables:

Feel free to add more vegetables to the bowl. Bell peppers, spinach, edamame, or even sautéed mushrooms would be great additions. You can also use cauliflower rice instead of regular rice for a lower-carb option.

    Add-Ons and Toppings:

    • Avocado: Creamy avocado can add a delicious richness to your bowl.
    • Pickled Ginger: For an extra burst of flavor, top with pickled ginger.
    • Egg: Add a soft-boiled or poached egg for added protein and richness.
    • Spicy Mayo: Mix mayonnaise with a little sriracha to drizzle over the bowl for a spicy kick.

    Meal Prep:

This recipe is perfect for meal prepping. Simply prepare the chicken, rice, and veggies in advance and store them in these glass airtight containers: Best Glass Containers When you’re ready to eat, just reassemble the bowl and enjoy!

Why You’ll Love This Teriyaki Chicken Bowl

This recipe is not only delicious but also packed with nutrients. The chicken provides lean protein, while the veggies add fiber and essential vitamins. The teriyaki sauce, made from simple ingredients like soy sauce, honey, and garlic, offers a bold, umami flavor without being overly sweet or salty. Plus, it’s an easy-to-make meal that can be tailored to fit your dietary preferences and is perfect for busy nights or meal prepping for the week.

So, what are you waiting for? Give this Teriyaki Chicken Bowl a try, and enjoy the perfect balance of savory, sweet, and healthy in every bite!

    Storage

To store your Teriyaki Chicken Poke Bowl:

    • Chicken and rice: Store separately in airtight containers in the fridge for up to 3-4 days.
    • Vegetables: If prepped in advance, store them in a separate container in the fridge for up to 3 days.
    • Sauce: Store any leftover teriyaki sauce in a small airtight container in the fridge for up to 1 week.

For longer storage, you can freeze the chicken (without the rice or veggies) for up to 3 months. Reheat thoroughly before serving.

    Top tip

For extra flavor, sauté your vegetables in a little bit of the leftover teriyaki sauce or sesame oil before adding them to the bowl—this adds a savory depth to the veggies and ties everything together!
