The secret to crispy chicken wings lies in a few key steps:
- Drying: Before seasoning the chicken wings, it’s important to dry them thoroughly with paper towels.
- Baking Powder or Flour: For this recipe, I used flour. An alternative to using flour is to toss the wings in a mixture of 1 teaspoon baking powder and 1 teaspoon salt for every 1 lb of chicken before baking. This can result in an even crispier texture and a unique flavor profile for your chicken wings.
- High Heat: Bake the wings at a high temperature, my ideal is at 425°F (200-220°C) on middle rack, to ensure that the skin gets crispy without overcooking and drying out the meat.
- Proper spacing: Arrange the wings in a single layer on a baking sheet, ensuring they are not overcrowded. This allows for better air circulation around the wings, ensuring even cooking and crispiness.
- Flip halfway: Flip the wings halfway through the baking time to ensure that both sides get evenly crispy.
- Broil (optional): For extra crispiness, you can finish the wings under the broiler for a couple of minutes after baking.
By adhering to these guidelines, you can effortlessly attain perfectly crispy chicken wings that are bound to impress!

Chicken Wings History And Fun Facts
Chicken wings have their roots in the United States, more specifically in the city of Buffalo, New York. In the 1960s, the Anchor Bar in Buffalo is credited with popularizing chicken wings as a bar snack. Legend has it that the bar’s owner, Teressa Bellissimo, cooked up a batch of wings as a late-night snack for her son and his friends. To spice things up, she tossed the wings in a mixture of hot sauce and butter, creating what would later be known as Buffalo wings.
After gaining popularity among patrons of the Anchor Bar, these crispy, saucy chicken wings quickly spread to other bars and restaurants in the Buffalo, New York area. Over time, Buffalo wings became a staple appetizer and party food across the United States, evolving to include a wide range of flavors and variations beyond the original hot sauce and butter combination. Today, they remain a beloved snack that’s perfect for any occasion.

Notes:
If you’re not a fan of using a sheet pan, you can substitute the sheet pan with a wire rack instead. This method will allow the heat to circulate evenly around the wings, ensuring that they cook evenly and become crispy all over. Additionally, using a wire rack will help to prevent the wings from becoming soggy from the oil that collects at the bottom of the pan.
To make your own dry rub mix for every 1 lb of chicken wings: salt & black pepper to taste, ¼-1/2 teaspoon chili powder, 1 teaspoon garlic powder, and 1 teaspoon smoked paprika.
To substitute flour, use 1 teaspoon of non-aluminum baking powder for every 1 lbs of chicken wings. Make sure you are not using baking soda.
For crispier wings, leave in the oven a few extra minutes.
To ensure that your wings are cooked to perfection, it’s important to keep a close eye on them as cooking times may vary, especially depending on the size of the wings. As mentioned in Step 5 above, allow the wings to bake for 20 minutes before checking them. Once you’ve reached the 20-minute mark, it’s crucial to monitor them closely to avoid overcooking.
